Più è facile, più è buono: Focaccia ai pomodorini.

Today I'm back with another super-easy recipe: a delicious focaccia prepared with natural leaven. If you prefer to use other types of yeast, I suggest you to read my recent post about homemade pizza where you can find all my useful tips for a tasty and digestible result. Altra ricetta facilissima da fare per una buona focaccia utilizzando il lievito naturale. Se preferite utilizzare un altro tipo di lievito, vi rimando al post sulla pizza in cui vi riporto tutti i miei accorgimenti per un risultato leggero e altamente digeribile. In quel post trovate anche tutte le indicazioni per la stesura dell'impasto.


Ingredients (makes a 28/30 cm diameter baking tray).
- 200 gr of whole wheat flour
- 100 ml plain water
- 75 gr already refreshed sourdough
- extra virgin olive oil
- salt (optional)
- 150 gr cherry tomatoes (or date tomatoaes)
- dry oregano leaves
 
Ingredienti (per uno stampo diametro circa 28/30 cm).
- 200gr farina semintegrale
- 100ml di acqua
- 75gr di lievito naturale già rinfrescato
- olio extravergine d'oliva
- un pizzico di sale (opzionale)
- 150gr di pomodorini ciliegini o datterini
- origano secco

Preparation.
As always, melt sourdough with water in a bowl. Add few tablespoons of olive oil and flour, start to stir. At last add a pinch of salt. Knead the dough until smooth and compact, then stretch it on a greased tray (this will keep it away from sticking!).
Chop up tomatoes and press them gently on the top of your focaccia. Dust it over with oregano and add some extra olive oil (optional).
Cover the tray and let it rise for at least 4 hours. Cook in static oven at 250'/300' C (480'/570' F) for at least 15/20 minutes.
Serve your focaccia hot and cut it in slices.

Procedimento.
Come sempre, sciogliere il lievito in acqua tiepida. Aggiungere qualche cucchiaio d'olio e la farina e iniziare ad amalgamare. In ultimo aggiungere un pizzico di sale. Impastare il composto finché non risulta liscio ed omogeneo, poi stenderlo sullo stampo aiutandosi con ulteriore olio (non vogliamo che si attacchi durante le fasi successive!).
Tagliare grossolanamente i pomodorini e pressarli delicatamente sopra l'impasto steso. Spolverare con origano e aggiungere ulteriore olio d'oliva (facoltativo).
Lasciare riposare coperto almeno 4 ore. Cuocere in forno statico a 250'/300' per almeno 15/20 minuti.
Servire calda e tagliata a spicchi.

Tips.
- As always, quantities are adaptable to your sourdough consistency. Anyway, my advice is to achieve a very soft dough: it will stretch much easier (grease your hands with olive oil if it's sticky) and rise better.
- Split the dough into two different trays for a crunchier version: it's up to your personal taste. And still, bake it soft or crunchier according to your personal taste. In this case, I prefer a soft focaccia as it has also tomatoes on top, but this doesn't mean that you have to do the same.

Suggerimenti.
- Come sempre, le quantità sono piuttosto indicative e possono essere adattate in base alla consistenza del vostro lievito. Il mio consiglio è quello di fare un impasto morbido: si stende con più facilità (ungetevi le mani con olio se è appiccicoso) e lievita meglio.
- Regolate la cottura in base ai vostri gusti, e ricavate due stampi se preferite una versione secca e croccante. Personalmente, in questa versione con i pomodorini preferisco una focaccia morbida, ma è possibile personalizzare il tutto secondo il proprio gusto personale.
