Esperimenti ai fornelli: Risotto con Mela, Gorgonzola e Speck.

The recipe I wrote about today is a praise of Trentino Alto Adige typical products, except for the Gorgonzola cheese. For this risotto, I took inspiration from a recipe I read in the La Cucina Italiana magazine (edition of November 2012). I might say "inspiration" as I didn't reproduce precisely the dish, but I arranged it with the ingredients I had.

Se non fosse per il gorgonzola, questo risotto sarebbe un elogio ai prodotti del Trentino Alto Adige.
La ricetta da cui ho preso ispirazione viene dalla rivista La Cucina Italiana, numero di novembre 2012. Ispirazione perchè non l'ho seguita fedelmente, ma ho fatto con quel che avevo a disposizione.












Ingredients.
- rice, any type which is recommended for risotto, like Carnaroli Rice (the quantity depends on the number of servings. Let's say that 80-90 grams of rice make one serving.)
- an apple
- about 100gr of Gorgonzola cheese, or any blue cheese
- 3/4 walnuts
- one, quite thick slice of speck or two thinner, chopped coarsely (in alternative you can use ham)
- extravergin olive oil, butter, white onion or shallot (spring onion), salt, vegetable broth or hot water and bouillon cube, white wine

Ingredienti.
- Riso Carnaroli (c'è chi usa i pugni, chi i bicchieri, chi i grammi. Dosare in base al numero di porzioni che si vogliono fare. La dose standard per una porzione è intorno gli 80-90 grammi.)
- una mela Steinman
- circa 100g di gorgonzola dolce
- 3/4 noci
- una fetta di speck tagliata un po' spessa o due tagliate sottili
- olio e.v.o., burro, cipolla bianca o scalogno, sale, brodo o acqua e dado, vino bianco


Preparation.
Heat olive oil in a saucepan, chop up onion finely and cook in it until soft (instead of onion, you can use a mix of onion, carrot and celery still chopped up finely). Add rice in the pan and toast it for few minutes. Pour white wine and make it dry off quickly. Add broth (or hot water with bouillon cube) in several steps, in this way you will put just the liquid is actually needed: enough to make the rice cooked, not too much to make a soup instead of a risotto! Meanwhile, add a half of the apple, peeled off and cut into little cubes. Add a hint of salt. Once the rice is cooked, add some Gorgonzola  cheese, about two teaspoons of butter and a bit of grated parmesan (optional), stir to soften the mixture until smooth.
In a pan apart, caramelize the other half of apple, cut into little cubes but this time with peel, with one/two teaspoons of butter. At last add your speck to make it crunchy.
Serve your risotto with a slice of Gorgonzola cheese on top, the caramalized apple with speck, and minced walnuts.


Procedimento.
Imbiondire della cipolla bianca tritata con un po' di olio e.v.o. (o un trito di cipolla, sedano e carota, a piacere). Aggiungere il riso, tostarlo e sfumarlo con un po' di vino bianco. Aggiungere il brodo (o acqua calda e dado) e versarne un po' alla volta durante tutta la cottura per far sì che non si attacchi e al tempo stesso non risulti troppo liquido quando il riso sarà cotto. Aggiungere metà mela senza buccia tagliata a dadini e un pizzico di sale. Una volta cotto il riso, mantecare con gorgonzola, una noce di burro e un po' di parmigiano grattugiato se gradito.
A parte caramellare l'altra metà della mela tagliata a dadini senza averla sbucciata con una noce di burro. In ultimo aggiungere anche lo speck stagliuzzato per farlo diventare croccante.
Servire i piatti con una fettina di gorgonzola, la mela e lo speck saltati, le noci sbriciolate.


Tips.
Apple has a sweet taste, especially when is cooked, so try to use a type of apple that has quite sour flavour.
When you use the wine, remember that the apple has a delicate flavour, so do not exagerate. If you are not sure to manage the balance, just skip the wine.
Gorgonzola cheese and speck have a heavy-bodied, salty flavour. In the original recipe there was no speck so you can avoid it if you think that your blue cheese is enough. 
It's a question of balancing the ingredients you have.

Consigli.
La ricetta originaria prevedeva l'utilizzo della mela Renetta. Non credo sia obbligatorio, basta scegliere una mela che abbia un sapore un po' acidulo così da non risultare troppo dolce una volta cotta.
Sfumare il riso con poco, pochissimo vino. La mela ha un sapore delicato e verrebbe totalmente sovrastato. Nel dubbio, non sfumate con il vino.
Se usate un gorgonzola non particolarmente dolce, potete avanzare di usare lo speck per evitare che il piatto risulti troppo forte, se non addirittura salato. La ricetta originaria preveda l'uso del gorgonzola naturale ed era priva di speck.

So, here it is a modern version of classic Italian risotto, but very tasty indeed!
Un risotto un po' rivisitato, ma con un sapore niente male!
