Più è facile, più è buono: lievito naturale. 

Natural leaven, natural yeast, sourdough bread: many names to define a precious helper for doughs. Back to the top after years of dry yeast supremacy (or at least here in Italy), this kind of leaven has a slower management but this doesn't mean it's complicated. First of all, due to its sourness, natural leaven is very easy to preserve and doesn't expire as long as you "feed" it.
Actually, both natural leaven and dry yeast have something in common: they are biological and not chemical. Besides each yeast is more appropriate for some recipes instead of others, let's say they are two different dimensions that co-exist.

Ritornato in auge dopo anni di monopolio del lievito di birra, questo tipo di lievito ha una gestione più lenta, ma non per questo più complicata. Innanzitutto, data la sua componente acida, il lievito madre è facile da conservare e deperisce più lentamente rispetto al lievito di birra.
In realtà non si hanno davanti due mondi così agli antipodi, perché entrambi i lieviti sono di natura biologica e non chimica. Inoltre ciascuno è probabilmente più indicato per certi tipi di preparati rispetto all'altro, sono due mondi che possono coesistere.

But let's focus on our main topic. People usually think about natural yeast as something quiet complicated to manage. If you look around on internet, websites or blogs, you can find a lot of pages dedicated to it, and in some cases thery are very detailed, almost like a scientific script. Knowing this topic so deeply provides a professional approach to it, but it is not so fundamental. After all my grandmother used to make her "alvadur" (in dialect, literally "riser") without any tecnical knowledge but a lot of experience, and her bread was delicious anyway.

Ma non divaghiamo troppo e parliamo del lievito madre. Spesso si pensa a questo lievito a come qualcosa di molto complicato da gestire. Navigando qua e là su siti e blog, si trovano migliaia di pagine, davvero dettagliate e con spiegazioni quasi scientifiche. Sicuramente conoscere l'argomento in modo così approfondito è una nota di merito, ma non è indispensabile. In fondo, mia nonna gestiva il suo "alvadur" senza particolari nozioni tecniche ma tanta esperienza, e il pane riusciva comunque benissimo.


That's why managing natural leaven is easy (and low-cost). This yeast is a dough full of fermenting sugary molecules, and for this reason it rises spontaneously. Our assignment is to keep it alive. As you would do with a plant, it needs to be fed: with water and flour.
In some cases you can add starch sources (whole wheats made from different cereals) or other sugary ingredients for desserts and sweet doughs (fruit, honey, rough sugar).
At present I use this yeast for bread, pizza and focaccia so I didn't try the sweet version, but I will for sure.
Natural leaven contains lactic acid bacteria, which help digestion, balance intestinal flora and avoid the usual feeling of bloated stomach caused by the abuse of dry yeast. I also read that natural leaven should decrease food intolerance risks, especially gluten, thanks to its decomposed structure, but as I'm not a doctor neither a nutritionist I don't have enough arguments supporting this thesis.

Ecco perchè in realtà coltivare il lievito madre è facile (e low-cost). È un impasto in cui sono presenti delle molecole zuccherine fermentabili, e per questo lievita spontaneamente. L'unico nostro compito è quello di tenerlo alimentato. Come si farebbe con una pianta, ha bisogno di nutrimento: acqua e farina.
In più in alcuni casi si possono aggiungere amido (farine integrali di varie tipologie di cereali) altre fonti di zucchero per un lievito per impasti dolci (frutta, miele, zucchero non raffinato).
Al momento uso questo lievito per pane, pizze, focacce quindi non ho mai sperimentato la versione con ingredienti dolci, ma non mancherò di provare.
I batteri lattici presenti nel composto consentono un'alta digeribilità dei preparati realizzati, aiutano l'equilibrio della flora intestinale e non danno il senso di gonfiore tipicamente provocato dell'abuso di lievito di birra. Inoltre ho letto che questo lievito abbassa il rischio di intolleranze alimentari, prima fra tutte il glutine, data la sua natura di composto in parte destrutturato, ma non essendo medico né nutrizionista non ho argomenti sufficienti per potere sostenere questa tesi.


The recipe for natural leaven is simply mixing water and different types of wheat. I usually prefer whole wheats without too much bran.
When I have to use some yeast, I regenerate it about 8 hours before, which consists in bringing some yeast and mixing in it with water and flour. That's it. I leave it out of the fridge covered by plastic wrap, so bacteria can work and the dough rises.
I don't have steady quantites for the "refreshment", I try to understand each time what it is necessary. If yeast smells too sour, it means that it is "hungry", and for refreshing I use a small amount of yeast and in proportion much more water and flour. If not so, proportions of the ingredients are quite balanced. About the texture: it's up to you and what you feel practical with, in my case it's a not too solid dough, but it reminds more a thick cream.
The only duty you have is to repeat the refreshment at least once a week to keep it strong and alive, even if you don't need it for cooking. But this process takes about 5 minutes, just the time required to mix the ingredients together.

La ricetta per mantenere il mio lievito è semplicemente acqua e farina, con farine di varie tipologie e finezza, che alterno di volta in volta. In generale prediligo quelle integrali senza troppa crusca. Quando devo utilizzare il lievito lo rinfresco circa 8 ore prima (rinfrescare consiste nel prendere un po' di lievito e mescolarlo con acqua e farina). Poi lo lascio riposare fuori dal frigorifero coperto da pellicola.
Le quantità per il rinfresco nel mio caso non sono fisse, cerco di regolarmi in base a quello che mi sembra sia meglio fare. Se il lievito ha un odore un po' acidulo e "ha fame", preferisco usare in proporzione più acqua e farina rispetto al lievito stesso nel rinfresco. Diversamente mantengo le proporzioni più o meno omogenee. La consistenza con cui mi trovo bene è un panetto non particolarmente solido, della consistenza di una crema o di una pastella molto densa. Ma anche in questo caso si è liberi di gestirlo come si è più comodi.
L'unico onere è quello di dover ripetere il rinfresco almeno una volta a settimana per mantenerlo sano e forte, anche se non viene usato per qualche preparazione. Ma è un'operazione che porta via davvero 5 minuti, giusto il tempo di amalgamare gli ingredienti.


Making a starter of natural yeast is not too complicated, there are many recipes on the internet. What I suggest to you is to ask some to a friend, or to look for a "pusher" on the internet. In Italy it's possible to find them on website.

Tutte le indicazioni che ho scritto si riferiscono al mantenimento del lievito, mentre per generarlo la prima volta (il cosidetto "starter") si possono trovare diverse video e ricette su internet. Oppure se ne può chiedere un po' ad un conoscente, o ancora cercare lo "spacciatore" più vicino su questo sito.
